Braai Recipe Ostrich & Blue Cheese Burger

The ostrich & blue cheese burger is thank to its great ingredients really healthy. Braai is able to deliver both: a healthy and delicious meal!

The ingredients will serve about 4 people.

Straußenburger-small-200x300Ingredients for the blue cheese sauce:

  • 250g blue-veined cheese, crumbled
  • 60g butter, softened
  • 2 tablespoons sweet white wine
  • 2 teaspoons fresh mint, chopped
  • 1 teaspoon fresh rosemary needles
  • 2 teaspoons fresh origanum, chopped
  • 100g crème fraîche or sour cream
  • Salt & pepper to taste

How to prepare the blue cheese sauce:

  1. Beat the cheese and butter in a bowl (an electric beater is ideal) until smooth and creamy.
  2. Add the wine and herbs, and mix well.
  3. Fold through the crème fraîche.
  4. Season to taste.

 

Ingredients for the roosterkoek:

  • 1kg flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 250g butter, cubed
  • 250ml sour cream

How to prepare the roosterkoek:

  1. Mix the dry ingredients together. Cut the butter cubes into the flour mixture.
  2. Add the sour cream until it forms a medium-stiff dough.
  3. Roll out to 1cm thickand cut into blocks to make hamburger-sized rolls – remember that they riseslightly during the cooking process.
  4. Cook these on the fire over a low heat.

 

Ingredients for the ostrich:

  • 4 ostrich fillets
  • 1 red onion, sliced into rings
  • 2 tomatoes, sliced
  • Handful of rocket leaves
  • Freshly ground salt & black pepper

How to prepare the ostrich:

  1. Sear the ostrich fillet on a hot fire and season lightly.
  2. Cut the roosterkoek open
  3. When browned on cooler coals and build your burger, starting with the ostrich fillet, and ending with the onion and tomato, topped with the blue cheese sauce.
  4. Garnish with rocket leaves and enjoy.
